Time and wines tba. The shop has been very steady throughout the wintry season thanks to all the "Brooklinites" who regularly visit for bread, cheese and wine. The Cave will close down for one week after the March tasting to allow for some refreshing of the shop, placement of new equipment, and overall tweeking of the shop layout.&lt;/em&gt;&lt;/strong&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;&lt;em&gt;Please note that the coffee master, David Dillon has extended his "cupping" hours. He is still at The Cave on Tues. &amp;amp; Friday, but at his beautiful machine earlier. 9-2. Sat. hours for cappuccino are 11-4. If you are a decaffeinated person, he also makes a decaf, or a hot chocolate. The past couple of weeks have been a flurry of permit approvals, and licensing. Everything needs re-inspection and testing. Ie: water, electric, refrigeration, liquor inventory and the like. Contractors are here all week putting in more juice, shelving, etc.I really can't stand not having the doors open for business and I miss seeing all your familiar faces. One is in Great Barringtion, Ma. called Rubiner's. &lt;a href="http://www.rubiners.com/"&gt;www.rubiners.com&lt;/a&gt; If you are ever in the area, stop in for a treat. It was once a financial institution and there are some remarkable features of the shop such as the beautiful ceilings, bank vault for aging cheese and of course the cheese itself.&lt;br /&gt;Another market in town worth visiting is Guido's Fresh Market. Although I won't "give away the store," so to speak, I will do all I can to insure everything not shelf stable finds it's way into someone's hands at a great reduction in price. On another note, there is a new cheese in the shop. Although I asked for shipment after my return March 22nd, my Echo Ridge order(which I had to place early to reserve the small quantities they produce) showed up yesterday. There are Maine bries, camamberts in very limited quantities. Although I wasn't present at a casual, early meeting, it was passed on to me that some different ideas were tossed around. The idea of a later season, or early fall "Brooklin Harvest Supper" was one. This would be in place of the open market on the green as years past. Farms, producers, restaurants, businesses would donate something and a local foods menu would be offered at a decided upon location(ideas?), at an affordable price. Proceeds to benefit a Brooklin fund or charity, or establish a new one. I think establishing a specific producer's/grower's /farmer's fund might be an idea. $ for start-up, seeds, equipment, replacing systems. Not a loan- a grant model. Daylight savings is in a mere few weeks. I need to procure some simple, comfortable seats for inside but especially outside so people can relax and chat. Need another case for inside to house cheese. I am determined to get an iced coffee/tea system set up, but I'm befuddled and blown away at the cost. However I and others love a tall cold glass full of ice and coffee on a warm day. Searching out recycled take out ware, bags, wine carriers &amp;amp; the like. A freezer? A fridge? Would make things more efficient. Keeping the truffles cool(a must) in warm weather. Another AC? A fan? Contracted to have a handicap access ramp built in May. Looking for a low cost loan. Well I'm rambling, but that's where my noggin's at at this hour. Soup in the sumer? I don't think so, unless we get a raw, wet snap of weather....it's Maine, so likely. This is conducive for a lot of organizing, punch lists &amp;amp; the like when the world is asleep. There's a lot to do everyday. Thursdays I rip apart Betty cheese by cheese, give her an aggressive bath with steel wool and bleach and lovingly rearrange her contents in the most provocative way possible. In the days after V-Day, I tore down the red hearts, flowers, etc. and set about to create a new front window display. What to do? The thought of a prez day theme was a tad too titillating for me. Anyway, after placing orders, cleaning, email, making soup, slicing cheese, yada, I stripped out the front window, cashed out and dashed to Ellsworth for hair triage, meanwhile leaving the window well, bare. This is unsettling. I grasped for ideas the next morning and well, you gotta work with what you got. I love to have the opportunity to delight peoples senses and be a conduit for a lot of happy exchanges between neighbors and strangers in the shop. There is always laughing and smiles. The trick will be keeping my cheese case interesting, fresh and varied, but also to sell down most of what I've got before leaving town. I will judiciously have to let some cheeses run out for a bit. I can't sell smelly cheese. Stinky cheese I love to sell, but definitely not smelly. You can all help.
